VEGAN COCONUT TART RECIPE
Today, we figured out a way to make our very own version of the beloved treat, finally giving us the opportunity to prepare and enjoy them at home! It’s honestly so simple and the best part is, they are vegan, raw, cheaper to make ourselves and (big plus) there is no cooking involved! See the recipe below!
- Soak raw cashews in a small bowl of water overnight
- Drain the water from the bowl
- In a separate bowl combine the almond flour, shredded coconut, coconut oil, honey and sea salt and mix until smooth
- Divide and press into 6 tart pans and put in the fridge to chill
- Blend the cashews, coconut oil, coconut milk, honey, vanilla extract and sea salt until smooth
- Divide and spread into the 6 tart crusts, dust with coconut and let chill overnight
- Add fruit, vegan chocolate or coconut flakes on top, keep refrigerated and serve cold
Crust Ingredients:
- 1 & 1/2 cups almond flour
- 1/2 cup shredded coconut
- 3 tablespoons coconut oil
- 2 tablespoons local honey or maple syrup to make it vegan
Filling Ingredients:
- 1 & 1/2 cups raw cashews
- 2 tablespoons coconut oil
- 3 tablespoons coconut milk
- 2 tablespoons local honey or maple syrup to make it vegan
- 1 teaspoon vanilla extract
- 1 pinch of sea salt
