Back in the day, one of our most favorite treats from the local health food store was the Coconut “Hail Merry” Vegan Tart. We would buy one tart to share between us and cut it into tiny slices so we could savor every little bite.

Today, we figured out a way to make our very own version of the beloved treat, finally giving us the opportunity to prepare and enjoy them at home! It’s honestly so simple and the best part is, they are vegan, raw, cheaper to make ourselves and (big plus) there is no cooking involved! See the recipe below!

The Lills Food | Vegan Coconut Tart

To make Vegan Coconut Tarts:

  • Soak raw cashews in a small bowl and let it sit overnight
  • Drain the water from the bowl
  • In a separate bowl combine the almond flour, shredded coconut, coconut oil, honey and sea salt into a bowl and blend until smooth
  • Divide and spread into 6 tart pans and put in the fridge to chill
  • Blend the cashews, coconut oil, coconut milk, honey, vanilla extract, and sea salt until smooth
  • Divide and spread into the 6 tart crusts, dust with coconut and let chill overnight
  • Add fruit, vegan chocolate or coconut flakes on top and serve cold

Crust Ingredients:

  • 1 & 1/2 cups almond flour
  • 1/2 cup shredded coconut
  • 3 tablespoons coconut oil
  • 2 tablespoons local honey

Filling Ingredients:

  • 1 & 1/2 cups raw cashews
  • 2 tablespoons coconut oil
  • 3 tablespoons coconut milk
  • 2 tablespoons local honey
  • 1 teaspoon vanilla extract
  • 1 pinch of sea salt
