TOSTONES (TWICE FRIED PLAINTAINS) RECIPE
- Cut the plantains into 1 inch slices
- Heat 3-4 tablespoons of virgin coconut oil in a pan
- Fry the plantains on both sides until color appears, 1-2 minutes
- Place the fried plantains in a towel lined bowl to absorb the excess oil
- Once the plantains have cooled, press each one between your cutting board and a paper towel so they become about half their height
- Heat 3-4 tablespoons of the coconut oil slightly hotter than the first fry
- Fry the plantains again on both sides until crispy (Keep in mind not to burn them on the second fry)
- Cool the plantains in a towel lined bowl and sprinkle sea salt, if desired.
- Serve warm with black beans and rice.
