THREE GREENS GOLDEN BEET SALAD RECIPE

When the two of us visited Santa Fe, New Mexico, we enjoyed a wonderful lunch at a restaurant called Casa Sena and had one of the most unbelievable salads of our life. It was so fresh, so green and we fell in love with the pickled beets. Now, when we get the craving for that salad, we make our very own that does the trick. It satisfies our hunger pains and it is full of nutrients. Enjoy our Three Greens Golden Beet Salad Recipe below!

Three Greens Golden Beet Salad Recipe | The Lills

Three Greens Golden Beet Salad Recipe For Two

  • Add oil, vinegar and lemon juice into a large bowl.
  • Dice garlic very fine and add to the dressing.
  • Add 2 turns of fresh ground black pepper and a pinch of salt.
  • Combine well with a whisk or fork.
  • Remove stems from kale.
  • Roll and cut the kale pieces into strips.
  • Knead the kale strips in the large bowl of dressing to wilt the leaves.
  • Roll and cut the spinach leaves and red leaf lettuce.
  • Lightly toss the spinach and lettuce in the dressing and kale.
  • Top with matchsticks of raw golden beet, thin sliced onion and sliced cremini mushrooms.

Ingredients & Equipment:

  • 2 tbs. virgin olive oil
  • 2 tbs. balsamic vinegar
  • 1/4 lemon
  • 1/2 clove of garlic
  • 2 turns of fresh ground black pepper
  • Pinch of salt
  • 1 cup spinach
  • 1 cup red leaf lettuce
  • 1 cup kale
  • 1/8 small onion, sliced thin
  • 1 large cremini mushroom
  • 1/2 golden beet cut into thin matchsticks
  • One large bowl
