SIMPLE VANILLA AMARETTI COOKIE RECIPE
Vanilla Amaretti Cookie Recipe:
- Whisk the sea salt, cane sugar, almond extract and egg together in a bowl
- Add almond flour, 1/4 a cup at a time, until everything is mixed evenly
- Roll into a ball, cover the bowl and place in the fridge (1+ hour to overnight – the colder/firmer, the better)
- Preheat oven to 320 degrees
- Take the dough out of the fridge and roll out 1 – 1.5 teaspoon balls
- Roll each ball in cane sugar and/or powdered sugar
- Place each ball on a baking sheet, on a cookie pan (.5-1 inch apart)
- Bake for 10-15 minutes, or until golden brown around the edges (they will firm up when they cool)
- Cool for 5 minutes and serve warm or room temperature

- 1 + 1/4 cup organic almond flour
- 1 organic egg
- 1/2 cup organic cane sugar
- 1/2 teaspoon vanilla extract
- pinch of Himalayan sea salt
