QUINOA STUFFED MUSHROOM RECIPE
- Make 1 cup of quinoa (cook in vegetable broth instead of water for more flavor)
- Rub pan with garlic clove for flavor
- Sauté vegetables in 2 tablespoons of olive oil on medium heat, until soft
- Mix vegetables into quinoa
- Rub lemon juice into the shredded kale until it is wilted
- Add the kale, a pinch of sea salt + pepper into the quinoa/veggie mixture and toss together evenly
- Stuff mushrooms evenly with the quinoa/veggie mixture
- Grease outside of mushrooms with olive oil
- Put the mushrooms on a baking pan
- Bake at 350F for 10-15 minutes or until hot in the center
- Let cool and serve warm

- 1 cup quinoa (prerinsed)
- 10-15 medium cremini mushrooms
- 3 tablespoons olive oil
- 1/4 minced onion
- 3 small shredded kale leaves (stems removed)
- 1 garlic clove
- 1/2 tomato, diced
- 1 carrot, diced
- Pinch of sea salt
- Pinch of pepper
- 1/4 lemon (juice)
