The two of us love the earthy flavors that come from mushrooms, so we cook with them often. One of our favorite things to do is stuff them with yummy ingredients. Stuffed mushrooms make perfect little appetizers and they work well as a side dish too. See our Quinoa Stuffed Mushroom recipe below!

Couscous Stuffed Mushroom Recipe | The Lills Food

Quinoa Stuffed Mushroom Recipe:
  • Make 1 cup of quinoa (cook in vegetable broth instead of water for more flavor)
  • Rub pan with garlic clove for flavor
  • Sauté vegetables in 2 tablespoons of olive oil on medium heat, until soft
  • Mix vegetables into quinoa
  • Rub lemon juice into the shredded kale until it is wilted
  • Add the kale, a pinch of sea salt + pepper into the quinoa/veggie mixture and toss together evenly
  • Stuff mushrooms evenly with the quinoa/veggie mixture
  • Grease outside of mushrooms with olive oil
  • Put the mushrooms on a baking pan
  • Bake at 350F for 10-15 minutes or until hot in the center
  • Let cool and serve warm

Quinoa Stuffed Mushroom Ingredients:

  • 1 cup quinoa (prerinsed)
  • 10-15 medium cremini mushrooms
  • 3 tablespoons olive oil
  • 1/4 minced onion
  • 3 small shredded kale leaves (stems removed)
  • 1 garlic clove
  • 1/2 tomato, diced
  • 1 carrot, diced
  • Pinch of sea salt
  • Pinch of pepper
  • 1/4 lemon (juice)
