PINTO BEAN VEGETABLE MEDLEY RECIPE
- Put almonds, coconut milk and water in a blender and blend on high until smooth
- Strain mixture through mesh seive or cheese cloth and into container (preferably with a lid)
- Keep refrigerated and serve cold
Ingredients:
- 1 cup pinto beans
- 1 diced green tomato
- 1/4 diced green pepper
- 1/4 diced red pepper
- 1/4 diced yellow pepper
- 1/2 diced large onion
- 1 table spoon olive oil
- 1 large clove minced garlic
- 1 teaspoon cumin
- 1/4 teaspoon chili powder
- 1/4 teaspoon chimayo chili powder
- 1 teaspoon honey or brown sugar
- 1 teaspoon sea salt
- 1/2 teaspoon ground pepper
- 1 cup prepared brown rice
