PINTO BEAN VEGETABLE MEDLEY RECIPE

Every once an a while we make our own little side dish medleys, full of harmonizing ingredients. This recipe calls for beans, tomatoes, bell peppers, garlic, onion and spices. It’s delicious and a home run side-dish, if you ask us. Enjoy our Pinto Bean Vegetable Medley recipe below!

The Lills Food Pinto Bean Vegetable Medley

Pinto Bean Vegetable Medley Recipe:

  • Put almonds, coconut milk and water in a blender and blend on high until smooth
  • Strain mixture through mesh seive or cheese cloth and into container (preferably with a lid)
  • Keep refrigerated and serve cold

Ingredients:

  • 1 cup pinto beans
  • 1 diced green tomato
  • 1/4 diced green pepper
  • 1/4 diced red pepper
  • 1/4 diced yellow pepper
  • 1/2 diced large onion
  • 1 table spoon olive oil
  • 1 large clove minced garlic
  • 1 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon chimayo chili powder
  • 1 teaspoon honey or brown sugar
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground pepper
  • 1 cup prepared brown rice
