Every once an a while we make our own little side dish medleys, full of harmonizing ingredients. We were most surprised by our pinto bean vegetable medley. It’s chocked full of beans, tomatoes, bell peppers, garlic, onion and spices. It’s a home run side dish if you ask us. Enjoy our recipe below!

The Lills Food Pinto Bean Vegetable Medley

To make Pinto Bean Vegetable Medley:

  • Put almonds, coconut milk and water in a blender and blend on high until smooth
  • Strain mixture through mesh seive or cheese cloth and into container (preferably with a lid)
  • Keep refrigerated and serve cold


  • 1 cup pinto beans
  • 1 diced green tomato
  • 1/4 diced green pepper
  • 1/4 diced red pepper
  • 1/4 diced yellow pepper
  • 1/2 diced large onion
  • 1 table spoon olive oil
  • 1 large clove minced garlic
  • 1 teaspoon cumin
  • 1/4 teaspoon chili powder
  • 1/4 teaspoon chimayo chili powder
  • 1 teaspoon honey or brown sugar
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground pepper
  • 1 cup prepared brown rice
