ORZO PASTA SALAD RECIPE

While on our travels, we came across an amazing treat: Orzo. Orzo is a short-cut pasta, which looks like big rice grains. We were unfamiliar with this type of pasta and when we tried it at a little deli, we were blown away. The delicious salad-like mixture contained sun dried tomatoes, olives, feta cheese and oil. It didn’t leave us feeling overfilled, like many other pastas do, so when we got the chance, we made our own batch. We added onions, parsley, oregano and decided to go with avocado oil, instead of olive oil. Try the recipe below!

Simple Orzo Pasta Salad Recipe | The Lills Food

Orzo Pasta Salad Recipe:

  • Boil 3 quarts of water
  • Add 3 tablespoons of sea salt to boiling water
  • Add 1 cup of orzo to boiling water
  • Boil the orzo for 9 minutes
  • Drain the orzo (don’t rinse) and put it into a bowl
  • Cut the sun dried tomatoes into strips, dice them and add them to the orzo
  • Add the chopped onion and diced olives to the mix
  • Finely dice the parsley and oregano and add to the mix
  • Add the feta cheese crumbles, avocado oil and ground pepper
  • Lightly toss until mixed together
  • Serve warm, at room temperature or place the mixture in the fridge for an hour to chill

Orzo Pasta Salad Ingredients:

  • 1 cup orzo
  • 3 tablespoons sea salt
  • 2 sun dried tomatoes
  • 1/4 cup chopped onion
  • 1/4 cup diced kalamata olives
  • 1 tablespoon diced fresh parsley
  • 1 tablespoon diced fresh oregano
  • 1/4 cup feta cheese crumbles
  • 1 tablespoon avocado oil
  • ground black pepper to taste
