ORZO PASTA SALAD RECIPE
Orzo Pasta Salad Recipe:
- Boil 3 quarts of water
- Add 3 tablespoons of sea salt to boiling water
- Add 1 cup of orzo to boiling water
- Boil the orzo for 9 minutes
- Drain the orzo (don’t rinse) and put it into a bowl
- Cut the sun dried tomatoes into strips, dice them and add them to the orzo
- Add the chopped onion and diced olives to the mix
- Finely dice the parsley and oregano and add to the mix
- Add the feta cheese crumbles, avocado oil and ground pepper
- Lightly toss, until mixed together
- It should yield at least 4 small portions
- Serve warm, at room temperature or place the mixture in the fridge for an hour to chill

- 1/4 cup diced kalamata olives
- 1 tablespoon diced fresh parsley
- 1 tablespoon diced fresh oregano
- 1/4 cup feta cheese crumbles
- 1 tablespoon avocado oil
- ground black pepper to taste
