MUSHROOM ONION SOUP RECIPE

When the first chill of Fall hit, we were quick to cook up some hot soups! One of the easiest and most soothing soups we enjoy is our mushroom onion soup. It’s hearty, the thick red onion melts in our mouths and the mushroom gives it a rustic feel and taste. Enjoy this soup in a bowl or mug and feel free to add melted cheese or toasted bread for some extra oompf!

The Lills Food Mushroom Onion Soup

Mushroom Onion Soup Recipe:

  • Melt olive oil in a pot on high heat
  • Add thickly sliced onion until soft, remove and place in bowl
  • Add mushrooms until soft
  • Stir back in the onions
  • Add vegetable broth and apple cider vinegar and boil
  • Season with sea salt and ground pepper to taste
  • Serve warm and enjoy!

Ingredients:

  • 1 1/2 tablespoon olive oil
  • 1 pound thickly sliced red onion
  • 2 portobello mushrooms
  • 4 cups vegetable broth (we prefer homemade over store-bought)
  • 1/2 cup apple cider vinegar
  • Pinch of sea salt
  • Pinch of ground pepper
