LEMON BAR MUFFIN TREAT DAY RECIPE

Susie Lill introduced us to lemon bars and we’ve come up with our very own twist! Rather than using all purpose flour we use almond flour and instead of using butter, we use coconut oil. These treats definitely hit the spot and still give us the lemon bar flavor we crave. See the recipe below!

The Lills Food Lemon Bar Muffin

Lemon Bar Muffin Treat Day Recipe:

  • Mix the almond flour, powdered sugar and coconut oil to make the crust
  • Press into the muffin tins and up the sides
  • Bake at 350 for 10 minutes or until starting to brown
  • In a bowl, mix the eggs or egg substitute, sugar and lemon juice
  • Mix the baking powder and almond flour together, then mix into the liquid mixture
  • Pour into the freshly baked crusts
  • Bake at 350 for 10 minutes or until crust is golden brown and the top is firm
  • Cool and enjoy!

Crust Ingredients:

  • 2 cups almond flour
  • 1/2 cup powdered sugar
  • 1 cup coconut oil

Filling Ingredients:

  • 4 eggs or flaxseed egg substitute
  • 2 cups powdered sugar
  • 1/3 cup lemon juice
  • 1/4 cup almond flour
  • 1/2 teaspoon baking powder
