LEMON BAR MUFFIN TREAT DAY RECIPE
- Mix the almond flour, powdered sugar and coconut oil to make the crust
- Press into the muffin tins and up the sides
- Bake at 350 for 10 minutes or until starting to brown
- In a bowl, mix the eggs or egg substitute, sugar and lemon juice
- Mix the baking powder and almond flour together, then mix into the liquid mixture
- Pour into the freshly baked crusts
- Bake at 350 for 10 minutes or until crust is golden brown and the top is firm
- Cool and enjoy!
