HOMEMADE VEGGIE PIZZA FOR TWO TREAT DAY RECIPE
- Line a 9 inch circular baking pan with parchment paper
- Form the dough around the pan, leaving a small lip of crust along the wall of the pan
- Swirl the tomato sauce thinly and evenly over the dough
- Evenly layer thinly cut discs of the fresh mozzarella around the sauce
- Layer the bell peppers, onions, mushrooms and spinach over the cheese
- Dice up some mozzarella and sprinkle it over the toppings
- Bake at 425F for 15 minutes or until the crust and cheese begins to brown
- Let cool for 5 minutes
- Cut into 8 slices and serve warm

- Thin crust pizza dough (homemade or pre-made)
- 1/4 cup tomato sauce
- 8oz of fresh mozzarella cheese (a long log is perfect)
- 2 large cremini mushrooms, thinly sliced
- 1/4 red bell pepper, thinly cut into strips
- 1/4 onion, thinly sliced
- 1/2 cup chopped spinach
- 9 inch circular baking pan
