Eating eggplants are full of essential nutrients. They promotes the growth of new blood vessels, strengthen bones and fight free radicals in the body. Eggplants reduce stress, combats anemia and boost cognitive health. Although we’ve never really enjoyed the taste of them, we’ve found wonderful ways to incorporate them into our diet.
