CRANBERRY STRAWBERRY PIE TREAT DAY RECIPE
- Mix dry ingredients in a food processor
- Add cold butter and mix until crumbly
- Add cold water one tablespoon at a time until the dough gathers
- Roll into a ball and flatten into a disc
- Wrap in plastic and chill in fridge for an hour
- Roll out dough thinly
- Flour and line pie pan with dough, crimping around the edges
- Boil 1 cup of water with 1 cup of sugar on medium-high heat
- Once boiling, add 1 1/2 cups cranberries
- Lightly boil until thick and syrupy
- Take off the heat
- Add 1 1/2 cups fresh cranberries, strawberries, lemon juice, flour and 1/4 cup sugar
- Mix together
- Pour mixture into the pie dough and bake at 425 degrees for 30 minutes or until browning
- Bring temperature down to 350 and bake for 20 minutes
- Let cool for 15 minutes
- Slice and serve warm
Pie Crust Ingredients:
- 1 1/4 cup almond flour or unbleached flour
- 1 tablespoon cane sugar
- 1/8 teaspoon sea salt
- 10 tablespoons cold butter
- 4 tablespoons ice cold water
Cranberry Strawberry Filling Ingredients:
- 3 cups fresh cranberries
- 1 1/2 cups diced strawberries
- 1 tablespoon fresh lemon juice
- 1 1/4 cup sugar
- 1 cup water
- 1 tablespoon of almond flour or unbleached flour
