CHOCOLATE CHIA WALNUT PUDDING

Sometimes, we get sugar cravings and although it would be easy to grab a processed chocolate bar, sugary snack or candy, we are reaching for better alternatives. We’ve even found ways to get some extra good nutrients (like chia seed) into our desserts. See our Chocolate Chia Walnut Pudding recipe (with no milk, no eggs and no added sugar) below!

Chocolate Chia Walnut Pudding Recipe | The Lills Food

Chocolate Chia Walnut Pudding Recipe:

  • Soak the walnuts in 1 cup of pure water for at least an hour
  • Discard the water that the walnuts were soaking in
  • In a blender, blend the soaked walnuts and 1 cup of pure water together
  • Pour the blended mixture into a fine mesh strainer and use the back of a spoon to help push the liquid through the strainer (it should yield about 3/4 cup liquid) to make the walnut milk
  • Put the walnut milk into a clean blender and add the coconut milk, banana and vanilla extract
  • Once blended well, add the cocoa powder and blend again
  • Pour the mixture into a glass jar (make sure it’s at least a 16oz jar, as you’ll have at least 1 1/2 cups of liquid)
  • Add the chia seeds and mix them in thoroughly with a spoon
  • Cover the jar and put in the fridge for at least an hour to chill and for the chia seeds to saturate and expand
  • Add sliced bananas and/or crushed walnuts on top and enjoy!

Chocolate Chia Walnut Pudding Ingredients:

  • 1 cup organic walnuts
  • 2 cups of pure water
  • 1/2 cup coconut milk (no guar gum)
  • 1 very ripe banana
  • 3 teaspoons organic cocoa powder
  • 1/4 teaspoon organic vanilla extract
  • 1/4-1/2 cup organic chia seed (the chia seed will expand, so less seed will make a creamier pudding, more seed will make a thicker one)
