CAULIFLOWER PANCAKE RECIPE
Cauliflower Pancake Recipe:
- Break cauliflower into florets
- Dry the florets and grate them or use the food processor and pulse until it’s rice-like
- Mix the florets, eggs, parmesan, mozzarella, parsley, garlic powder and sea salt in a bowl
- Put oil in pan on medium heat
- Put a tablespoon of mixture on and flatten it
- Let it sit and stiffen
- Flip after 3-4 minutes and cook for another 3-4 minutes
- Refry if you prefer them extra crispy
- Add a little oil into the pan before frying new pancakes
- Serve hot with sour cream, apple sauce or parsley and Greek yogurt
