We’ve always loved making and enjoying potato pancakes and apple pancakes, but we had never tried cauliflower pancakes with parsley and Greek yogurt before. The cheese really makes them and it turns out they are super easy to whip up and they make a perfect snack or appetizer. We’ll definitely be cooking this treat again in the near future! Cauliflower Pancake Recipe | The Lills Food

Cauliflower Pancake Recipe:

  • Break cauliflower into florets
  • Dry the florets and grate them or use the food processor and pulse until it’s rice-like
  • Mix the florets, eggs, parmesan, mozzarella, parsley, garlic powder and sea salt in a bowl
  • Put oil in pan on medium heat
  • Put a tablespoon of mixture on and flatten it
  • Let it sit and stiffen
  • Flip after 3-4 minutes and cook for another 3-4 minutes
  • Refry if you prefer them extra crispy
  • Add a little oil into the pan before frying new pancakes
  • Serve hot with sour cream, apple sauce or parsley and Greek yogurt

  • 1 large cauliflower
  • 2 eggs
  • 1/2 cup mozzarella
  • 2 tablespoons parmesan
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon sea salt
  • 3-4 tablespoons olive oil
