CARROT BEAN SAMOSAS TREAT DAY RECIPE

We do our best to eat as healthy as we can, but every once and a while we enjoy a treat day and savor some off-the-good-list ingredients, like butter. We had a treat day recently and decided to make some hand-made samosas that call for butter, flour and a fry. They knocked our socks off! Enjoy our carrot and bean samosa recipe below!

The Lills Food Carrot Bean Samosas

Carrot and Bean Samosas Recipe:
  • Melt the butter, set it aside and let it cool
  • Mix flour and melted butter together until crumbly
  • Add 1 tablespoon of water at a time (2-3 total) until it becomes dough-like
  • Knead the dough until firm and cover with a moist towel for 30-45 minutes
  • Dice the carrots and boil them in a shallow pan of water (just enough to cover the carrots) and let simmer
  • Add 1 teaspoon butter, sea salt, pepper and diced shallots
  • Keep on medium/high heat, add honey and let it reduce
  • In another pot, heat your white beans and strain them
  • Mix the cooked carrots, shallots and white beans together
  • Take the rested dough and use a rolling pin to flatten it evenly
  • Cut circles out of the flattened dough with a small jar to make pockets
  • Fill the pockets with the carrot, shallot and bean mix
  • Fold and brush the edges lightly with water and pinch to seal
  • Fry lightly (in butter or olive oil), remove and let cool
  • Fry lightly again (the second fry is key), remove and let cool
  • Pair with a cool dip and enjoy!

Dough Ingredients:

  • 3 tablespoons butter
  • 1 cup flour
  • 2-3 tablespoons water

Filling Ingredients:

  • 1 teaspoon butter
  • 2 carrots
  • 1/2 a shallot
  • 2 teaspoons local honey
  • 1/2 cup white beans
  • Sea salt and pepper to taste
