ALMOND FLOUR OATMEAL CARROT COOKIE RECIPE
Almond Flour Oatmeal Carrot Cookie Recipe:
- Preheat oven to 350 degrees
- Mix all of the dry ingredients in a bowl, except the chopped walnuts
- In a separate bowl, mix and whisk all of the wet ingredients and organic carrot pulp together
- Mix the dry and wet mixtures together
- Add the chopped walnuts and mix well
- Line a cookie pan with parchment paper
- Use a tablespoon to scoop the mixture and mold it into small balls
- Place a dozen balls onto the parchment paper
- Lightly flatten the tops
- Bake for 20 minutes
- Let cool for 5-10 minutes and serve warm

- 1/2 cup almond flour
- 3/4 cup pure maple syrup
- 4 tablespoons melted coconut oil
- 1/2 cup organic carrot pulp
- pinch of sea salt
- 1 teaspoon chia seeds
- 1/2 cup chopped walnuts
